Vinification and ageing
Soft pressing of whole grapes followed by fermentation of the must in steel tanks for 10-15 days at a controlled temperature between 15 and 18 degrees Celsius. Racking by sedimentation and ageing for at least 6 months on fine lees. Bottling and second fermentation in the bottle with ageing for a minimum of 36 months. Subsequent disgorging with the addition of the same wine to top up.

Organoleptic characteristics
Fine, persistent perlage, golden yellow colour with golden reflections. Fragrant on the nose, with notes of bread crust and almond. Full-bodied and velvety flavour, rich and persistent, with great elegance and a pleasant note of freshness and minerality.
TASTING NOTES
A Metodo Classico sparkling wine with a bright straw yellow colour and a fresh, refined aromatic profile. The nose reveals a gentle yet intense and persistent aroma, with notes of ripe fruit accompanied by hints of hazelnut and a delicate floral bouquet. On the palate, it is dry, harmonious and elegant, with a flavour profile reminiscent of honey and noble resins. Served at the ideal temperature of 6°C, it is perfect for accompanying the entire meal, making even the most important occasions special.

An excellent choice to accompany a wide variety of starters, from cold cuts to egg-based dishes. It can also accompany an entire meal.
