Vinification and ageing

Obtained from selected grapes that undergo natural drying, aimed at concentrating sugar and aromas. After soft pressing, the must ferments slowly at a controlled temperature. This is followed by 24 months of ageing in oak barriques, aimed at stabilising the structure and developing aromatic complexity, before bottling and subsequent ageing in the bottle.

Organoleptic characteristics

The greatness of a sweet wine is measured by its ability to maintain a balance between sweetness, acidity and savouriness. Deep yellow with golden reflections. Warm notes of dried apricot and honey stand out on the nose. On the palate, it is elegant and enveloping with a marked freshness.

TASTING NOTES

In the glass, it displays an intense golden colour, a prelude to a complex aroma of ripe exotic fruits such as pineapple and mango, accompanied by spicy accents and delicate notes of vanilla. On the palate, it is smooth and harmonious, with a sweetness that is well balanced by a pleasant freshness and a slight mineral vein that keeps the taste elegant and persistent. The aromatic concentration, refined through a period of ageing in barriques, makes Ravel a refined dessert wine, perfect with dry pastries, mature cheeses or as a meditation wine.
