Vinification and ageing
Made from red grape varieties cultivated using the Guyot pruning method, this wine is produced through a careful and precise process. After harvesting, the grapes are separated from the stems and transferred to steel tanks, where contact with the skins is carefully managed to achieve the desired pink hue of the base wine. With the arrival of spring, bottling takes place and refermentation in the bottle begins with the addition of liqueur de tirage. The final stage, disgorging, takes place in the autumn, strictly following the classic method.

Organoleptic characteristics
Fine and persistent perlage, the bouquet is clear and fresh with pleasant notes of currants, wild strawberries and rose hips. Pleasantly harmonious and elegant on the palate with good flavour, it maintains excellent fragrance and freshness on the finish.
TASTING NOTES
The term Saignée, which means bloodletting, is reinterpreted as a passionate and sanguine expression. The peacock on the label represents the pride of the Ca' Lojera winery and its constant desire to take on new challenges. The sparkling wine has a delicate pale pink colour with slightly orange hues. The nose offers fresh aromas of ripe red berries, followed by elegant floral notes and a subtle mineral touch, enriched by classic hints of bread crust and sourdough. The perlage is fine, numerous and persistent. On the palate, it is creamy, savoury and well-balanced, with a vibrant freshness. Versatile in its pairings, it elegantly accompanies fish dishes, carpaccio, tartare, sushi and lake specialities, and is also surprising with red fruit-based desserts.

Superb with lake fish, tuna carpaccio, sushi and tartare, or with a red fruit tart, an excellent choice for an aperitif.
